For most of my life, and for no good reason, I have avoided squash. This will probably change now that I have tried a little Joy of Cooking salad that can be prepared in seconds. Sauté yellow squash in olive oil and toss with garlic and parsley. It is the sort of dish that qualifies as the fast food of the slow food movement, and it is delicious.
Sadly, I haven't had time to do much this week other than work and cook squash.
we've been making zucchini pancakes. shred a huge-ass zucchini, throw in some parmesan, flour, salt and pepper and a couple eggs. actually, add the salt first, which will draw out the moisture, then drain it, then add the other stuff. mix with hands, form into patties, fry on both sides in a layer of oil until brown. yummy.

Viet does not like pancakes. He likes crepes. I will have to convince him that it is a zucchini crepe.
We enjoy the pancake-like Vietnamese dish (Banh Xeo, I think). A crispy outer crust, filled with shrimp.
